Raviolini Sick Soup

I must fess up - I totally yanked this soup from my sister one time when I had a cold. I modified it for my own taste and here we go...

As a vegetarian, chicken soup when I am sick isn't that appetizing. So this is a great alternative for the vegetarian who wants a tasty flavorful treat. The best part is it is so crazy easy to cook, you can do it with a fever stumbling around the kitchen. I have no photos, because I was sick and icky and didn't feel like taking one, and of course there is never any left when you share with your non-sick family members :) Don't forget all this spinach puts some great nutrients into your body to help you fight your ick.

  • vegetable broth
  • one package of frozen chopped spinach
  • raviolinis (these are great cause they are tiny but you can also use tortellini or any small pasta really)
  • spice to taste (i use pepper, berbere, thyme, etc)

  1. Bring broth just to a boil
  2. Add spices
  3. Add defrosted and drained spinach
  4. Bring to boil and let it cook a bit so the spinach flavor gets in the soup
  5. Pour in raviolinis and cook as long as directions say on package
  6. Serve and Enjoy
** Kid Friendly Tip - I scooped out the raviolinis and spinach into a bowl minimizing the broth for my son and he literally licked the bowl clean. It was the first time that I have gotten this little iron deficient cuteness to eat spinach so I am remembering the trick for the future. Of course he has little interest in liquid foods and would have made a crazy mess if we put much broth in it. **

WalkAround Soup - As Good As Outback's Walkabout Soup

If you have never enjoyed the delicious awesomeness that is Outback's Walkabout soup - run to your nearest chain. However, if there is not one near you, you may also resort to this recipe... of goodness...


  • 1 30oz bag of frozen shredded hashbrowns (like ore ida brand)
  • 5 cans of veggie broth
  • 1 can cream of mushroom soup
  • 1/2 sweet vidalia onion chopped onion
  • 1 package cream cheese (not reduced anything has to be whole)
  • shredded cheddar cheese
  • chives
 
  1. Combine taters, broth, soup, and onion into large pot (or crockpot if you have more time)
  2. Heat over medium high
  3. Once everything is heated, defrosted, and well mixed add in cream cheese
  4. Stir and wait until cream cheese melts (this may take some time)
  5. Once cream cheese is fully melted it is ready to serve
  6. Top with shredded cheese and chives to your hearts content
  7. Enjoy

Vegetarian French Onion Soup

So it hit me the other day that I hadn't had french onion soup (which used to be a favorite of mine) since I became a vegetarian. So I decided to figure out a way to make it vegetarian and south beach. And I did. I lost weight the day I ate it, so it apparently didn't effect my weight gain, and it was pretty good.

So here is the recipe to share:

INGREDIENTS

  • EVOO
  • SB safe butter spray
  • Vegetarian broth
  • Vidalia Onions (1 per bowl)
  • Light swiss cheese (shredded would be good but not necessary - i could only find it light in slices)
  • whole wheat bread/tofu if in stage 1
  • splenda
  • Salt
  • Pepper
  • Thyme
  • Light Soy Sauce
  1. Saute the onions in evoo and butter spray til they become translucent
  2. Add in some soy sauce and spices and a bit of wine/balsamic/splenda to carmelize a bit
  3. after the onions are sweet and soft you can pour in the veggie broth, about a containerfull
  4. add spice to taste and here is your veggie onion broth
  5. Bring it to a boil and then bring it down to a simmer for about 10 minutes
  6. Then pour the soup into oven safe bowls and set the oven to broil
  7. Float a tiny bit of whole wheat bread/tofu in the top of the soup bowl and lay the cheese on top of it to melt
  8. Cover the top with cheese and put it in the oven
  9. Broil until the cheese is melted and bubbling and turning brown at the top

And then you eat it - and its yummy :)
