The Ultimate Chopped Greek Salad


So my sister and I have been obsessing over this chopped greek salad at our local greek eatery (Hungry Greek) and after repeating visits there much this month I decided to try and replicate it. We absolutely loved our version - though next time I would see if I can buy their dressing or try to make my own. Also would add the beets next time that we forgot this time.

  • iceburg lettuce
  • romaine lettuce
  • tomato
  • feta 
  • 1/2 red onion
  • 1 cucumber
  • kalamata olives
  • black olives
  • chopped beets (optional)
  • chopped gyro meat (optional)
  • potato salad (we got a small container from Publix deli)
  • greek dressing ( I just got marie's greek vinaigrette but next time I would pay more attention to this and possibly buy a bottle from the local greek restaurant)
  • pita (who eats salad without bread?)

  1. Wash, peel and chop the cucumber
  2. Wash and Chop the lettuce, tomato, feta, onion, and olives
  3. Place the potato salad at the bottom of a large bowl
  4. Mix together lettuce, tomato, cuke, onion, and olives in the bowl
  5. Sprinkle feta on the top
  6. Pour dressing over the top
  7. Mix it all up
  8. Toast the flatbread or pita for the side
  9. Serve and Enjoy!


PS Make sure you put the collossal olives on your fingers and eat some like that

Meatless Lettuce Wraps (In the order of P.F. Changs or Chilis)


So. I can't tell you how many times I have been to Chilis and watched a friend eat those lettuce wraps while I silently drool over the concept. As a big fan of flavorful food and one who yearns to like lettuce more it was something I wish I could enjoy. When I found a couple copycat recipes for the chilis lettuce wraps and the lettuce wraps that they make at P.F. Changs I knew that I could make a version without meat that my family would enjoy. Not to toot my own horn... but toot. It was fantastic. My son ate his two huge wraps in the blink of an eye and then was stealing lettuce off of our plates before we could eat ours. My husband asked for more despite being stuffed. And I couldn't wait until everyone was gone today and I could sneak the leftovers for lunch. Bwahahaha - yeah its all gone now. So steal my recipe and fill your bellies. Of course if you want to, you can always substitute my fake chicken with chicken or any other meat.


  • big outer lettuce leaves (we used iceburg but anything is usable)
  • boca fake chicken strips, defrosted and chopped
  • 1/2 of a sweet vidalia onion
  • 3 cloves of garlic
  • 2 Tablespoons of chopped fresh ginger
  • chopped peanuts
  • green onions
  • 1 can of corn
  • 1 can of black beans
  • hoison sauce
  • 2 T teriaki sauce
  • 1 T rice vinegar
  • 1 T evoo
  • 1 T peanut butter
  • 1/2 T water
  • 1/2 T honey
  • 1/2 T chili sauce
  1. Cook fake chicken and onions over light evoo in pan until browned
  2. add garlic and ginger
  3. add corn and black beans
  4. add teriaki, vinegar, evoo, peanut butter, honey, water, and chili sauce
  5. cook until well blended and browned
  6. add green onions to the top and cook until they soften
  7. scoop mixture into lettuce, top with peanuts, wrap tightly
  8. Serve hot with hoison sauce and ENJOY!

Vegetarian Chicken Salad (Meat Free)


I have long looked at people eating chicken salad and wished that I could have something similar. Well over the past few years different companies have started making vegetarian chicken strips and I have tried out chicken salad recipes with it. Here is my fav of the moment:

  • chicken strips
  • lite mayo
  • mustard
  • lemon juice
  • vidalia onions chopped
  • tomatoes chopped
  • celery chopped
  • pitted and chopped kalamata olives
  • cilantro, chives, parsley, curry
  1. Heat the chicken and then place in large bowl
  2. Wash and Chop all of the vegetables
  3. Add all vegetables to chicken mixture
  4. Add mayo, mustard and spices to taste
  5. Serve alone or on a pita or bread
  6. Enjoy!

Kimfoo Salad Extraordinaire!

I have officially perfected the yummiest salad ever! So here I share it with you....


  • Red Leaf Lettuce
  • Romaine Lettuce
  • Spinach Leaves
  • Plum Tomatoes
  • Black Olives
  • Canned/Marinated Mushrooms
  • Shredded Cheddar Cheese
  • Ramon noodles
  • Corn Kernels
  • Avocado
  • Green Goddess Dressing

So um - do you really need to be told how to make this salad?
  1. Dice all the items into eatable pieces
  2. Empty contents into bowl
  3. Crunch up the raw ramon noodles (no sauce or power or anything) and scatter over as a crouton replacement
  4. Pour dressing over top
  5. Eat the heck out of it
*feel free to add anything that sounds good to you
